Belize is a Central American country situated on the Caribbean coast. It is surrounded by Mexico to the North, Guatemala to the South and West, and by the Caribbean Sea to the East. Belizean native’s are both of Mayan and Garinagu (singular Garifuna) descent which is a mix of West/Central African, Arawak, and Carib ancestry. The Mayan are thought to have been in Belize and the Yucatan region since the second millennium BC, before slavery. With maize as a significant and sustainable food source, the Mayan expanded their palate and began to cultivate and incorporate many other foods into their diet. The ancient Mayan also relied on tree-cropping for access to foods such as Tomatoes, Pineapples, Soursop, Papaya, Mammee Apples, Chili Peppers, Chaya, Chayote, Vanilla, Achiote and Allspice. The evolution of Mayan food culture allowed for experimentation with new staples and the development of new Mayan cuisine. These, in turn, became established in modern food practices. In the 21st century, people consume many foods that come from Mayan techniques, such as Chocolate, Avocado/Guacamole, Tortillas, Yuca and Tamales.
